This coffee has a very sweet, medium acidity and medium body. You will find notes of tangerine upfront followed by raspberry and underlined with cocoa that gives it a very pleasant depth. All the flavours will merge as you swallow your coffee and will leave you with a long lasting sweet orange dark chocolate aftertaste.
Xejuyu (chey-hoo-you) is a beautiful coffee farm that has been in the same family for three generations. This is represented visibly by the well-established coffee plants and abundant shade trees. The farm is created from Arabigo (typica), Bourbon and Catuai varietals, each contributing 33 percent. This special coffee is produced in small batches, so highly sought after.
Production is limited because the coffee trees are up to 50 years old which reduces their productivity, although new plantings and regeneration of the farm is underway. In addition, the towering shade trees create a high percentage of shade that contributes to the low yield and slows the maturation of the bean to influence the incredibly sweet flavour profile. At this high altitude, frost can be a threat, but these tall shade trees create an insulation layer protecting the coffee.
