You’ve just tasted four delicious speciality coffees. Here, we reveal which coffee was the best example of each of our flavour profiles - a fun test of your palete and great info to help you understand which flavours you like the most (remember, personal preference is no bad thing!).
It’s also worth noting that we ordered the coffees from A to D in terms of adventurousness. Sample A:
Chocolate & Caramel
HOUSE BLEND - THE SPIRIT OF UNION
Chocolate & Caramel flavours come from the roasting process, which sees a bunch of chemical reactions happen inside the bean (including a thing called the Maillard reaction) - essentially “browning” and caramelising the natural sugars. Sample A was our house Organic blend. It epitomises that Choco/Caramel flavour that attracts so many to the dark delights of coffee. With washed coffees from Balcones "Especial" Chirinos Cooperative, Northern Peru; Beneficio Santa Rosa, Honduras and Konga Cooperative, Yirgacheffe you should have tasted smooth dark chocolate with a spun-sugar sweetness following-up. Perfect for espresso or as a dessert coffee.

Nuts & Spices
BRIGHT NOTE BLEND
Nutty, spicy flavours are really prevalent ion speciality coffee. You’ll find yourself tasting macadamia, walnut, black pepper… even clove. Then you're cradling a cup of our Bright Note Blend (Sample B), you should’ve got sugar-coated peanuts. Perhaps with a sweet vanilla kick. Created from Candelaria, Guatemala and Fazendas Bobolink, Brazil and lightly roasted to keep it sweet, Bright Note Blend also gives cocoa and fruit on the palete, but that nut and gentle spice is the predominant profile here. So if you put "nuts & spices" for coffee B, give yourself a pat on the back (and a second cup).

Sample C:
FLORAL & CITRUS
YAYU WILD FOREST
Getting more adventurous now. The Floral & Citrus profile is packed with jasmin, coffee blossom, bergamot, lemon, orange, fire engines… OK, not fire engines, but you get the idea. Sample C, from the Yayu Coffee Forest Biosphere in Ethiopia should’ve tantalised you with a delightful fragrance of bergamot and coffee blossom, and a hint of lemon zest, right from when you opened the bag. The complex combination of lemon, jasmine and peach gives an impression of lightness and intensity that hopefully left you with a very pleasant citrus sensation on the tongue and a delicious toffee taste lingering on the palate.

Fruit
PANAMA EMPORIUM
There are bowls and bowls of fruit to be found in speciality coffee. We’re talking apricot, peach, cherry, passion fruit, kiwi fruit… you name it. When you tasted Sample D, you probably got an immediate hit of ripe cherry and red apple, followed with hints of strawberry syrup. If you’re lucky, you’ll have noted the blueberry in the chocolatey finish too. This is a truly complex coffee, from one of the best farms in Panama - in fact all the coffee comes from one “microlot” called Emporium.
